healthy shamrock shake recipe

it’s seven in the morning and the only thing on my mind is shamrock shakes. i’d love to swing by and pick one up on my way to work, but i don’t think my morning interview would be impressed if i walked in with a green cup of ice cream.

*please note this recipe is from the hungry girl cookbook

Shamrock ‘n’ Roll Shake
PER SERVING (entire recipe): 175 calories, 4g fat, 150mg sodium, 29g carbs, 2g fiber, 13.5g sugars, 7.5g protein – PointsPlus® value 5*

Ingredients:
1 tbsp. sugar-free French vanilla powdered creamer (like the kind by Coffee-mate)
3/4 cup light vanilla soymilk
1/2 cup fat-free vanilla ice cream (like Breyers Smooth & Dreamy Fat Free)
1/4 tsp. peppermint extract
2 drops green food coloring
1 no-calorie sweetener packet (like Splenda or Truvia)
1 1/2 cups crushed ice (8 – 12 ice cubes’ worth)

Directions:
Combine creamer with 1 tbsp. hot water and stir to dissolve. Transfer to a blender. Add all other ingredients to the blender, and blend at high speed until smooth. Pour into a glass and enjoy!

MAKES 1 SERVING

BTW, if you make this with light ice cream instead of fat-free, your shake will have 190 calories, 7g fat, and aPointsPlus® value of 5*. Not bad.

new product release- {woo woo}

today is the release of my favorite product, i’ve been perfecting the prototype since early fall and happy to finally be able to share it with you. i shared a picture on facebook a few weeks ago, asking for your ideas on what to name it and decided on poppy pod pins! thank you all so much for your suggestions!

i have one on my spring purse and love wearing them on scarves or jackets as well. they also can be customized to attach to headbands.

they come in a variety of different colors and patterns. just another reason for me to make excuses to go to the fabric store.

it’s been a busy week working, contemplating getting another puppy, obsessing over avocados and putting washi tape anywhere i can imagine.

b & i went out to eat on sunday morning, which is one of my favorite things to do- egg white omelet with avocado- yes please!

i have a new love- sperry’s and i happened to find two pairs in south carolina. not sure how i was able to crunch them into my full suitcase, but i did.

playing with some packaging ideas and putting with paint cards.

have i told you that i enjoy buying “outfits” for my iPhone? she (or he depending on the day) has a good two weeks worth of outfits.

i’m usually pretty good with budgeting my money when it comes to clothes. in college i wasn’t.. here’s an old picture of my closet- i’m a little embarrassed (wouldn’t you be too?).

the good news is that i wear almost everything in there still, minus the bright pink shoes and a few pairs of pants.

when i was in south carolina last week, i took advantage of a little shopping with my favorite shopping partner. we went to a few outlets (including kate spade, ahh heaven) and the local mall. i couldn’t pass up a few shirts i’ve been eyeing up at express, that happened to be on sale.

learning to relax and vacation recap

i just got back from a mini vacation in south carolina. seeing my best friend of over 20 years was amazing, but good gracious.. i really need to learn how to relax. being away from work and my normal routine was a lot more stressful than i was anticipating. unfortunately, days off of work mean a lot of catchup when i get back. when we weren’t out being tourist-y i was checking emails and trying to stay on top of things. i like things done right away and not being able to was difficult.

when i get home from a full day of work, i start working on orders or designs. maybe two to three hours later i stop to eat dinner and then work straight through until bedtime. when i wake up in the morning, i spend the first half hour checking work emails, then work out before jumping in the shower. afterwards i usually catch up on lovely poppy emails and rush off to work. i’m not sure when things changed and how i got myself to “enjoy” a 80+ work week, but i need to find a way to enjoy not working.
